To make Veg Kolhapuri, a special spice paste known as 'Vatan' is prepared by blending roasted coconut, stone flower, and bedki red chilies into a flavorful paste. This paste forms the heart of the dish, infusing it with the authentic flavors of Kolhapuri cuisine.

The key to perfecting Veg Kolhapuri lies in the meticulous roasting of the Vatan paste until it exudes a rich aroma and the oil begins to separate. This process intensifies the flavors and ensures a depth of taste that is characteristic of this beloved dish.

Once the Vatan paste is ready, an array of vegetables including carrots, cauliflower, peas, beans, onions, and capsicum are sautéed to perfection before being simmered in the flavorful gravy. The result is a tantalizing medley of textures and tastes that will leave you craving for more.
