  • 1/2 tbsp Poppy Seeds
  • 1/2 tbsp Saunf (Fennel Seeds)
  • 2 tbsp Desiccated Coconut
  • 1/2 cup Soaked Red Chilli Paste
  • 1/2 cup Diced Capsicum
  • 1/2 cup Carrots
  • 1/2 cup Cauliflower
  • 1/2 cup French Beans
  • 1/3 cup Green Peas
  • 1/2 cup Diced Onion
  • 1/2 cup Chopped Onion
  • 1 tbsp Ginger-Garlic Paste
  • 1/2 tbsp Chopped Green Chilli
  • 1 tbsp Salt
  • 1 tsp Turmeric Powder
  • 2-3 Tomatoes
  • 1 tbsp Chopped Coriander

Method:

Preparation of Kolhapuri Masala:

  1. Heat a pan and add oil.
  2. Add coriander seeds, jeera, bay leaves, dry red chillies, stone flower, cinnamon, star anise, black pepper, cloves, sesame seeds, poppy seeds, and desiccated coconut.
  3. Roast the spices until they turn light golden brown in color.
  4. Turn off the flame and add the soaked red chilli paste to the pan.
  5. Transfer the roasted spices and chilli paste to a mixer jar and blend into a fine paste.

Preparation of Veg Kolhapuri:

  1. Heat oil in a pan and add diced capsicum, carrots, cauliflower, and salt. Saute the vegetables until they are slightly tender.
  2. Add french beans and green peas, and cook for 1-2 minutes. Remove all the vegetables aside.
  3. In the same pan with the remaining oil, add chopped onion and saute until it turns golden brown.
  4. Add ginger-garlic paste and chopped green chillies, and saute for a couple of minutes.
  5. Pour in the blended Kolhapuri masala paste and cook it for a few minutes.
  6. Season with salt, turmeric powder, and cook until the oil starts to separate.
  7. Add tomato puree and cook for 4-5 minutes on medium heat.
  8. Then add diced onions, fried vegetables, and mix well.
  9. Sprinkle chopped coriander and cook for a few more minutes.
  10. Your Veg Kolhapuri is ready to be served.
